Pantry Must-Have: Chipotles in Adobo Sauce

Chipotles in Adobo Sauce have become a staple in my kitchen. I purchased my first can a few years back when I was making Rachael Ray’s Ultimate Burger. The sauce for said burger calls for the following ingredients (and it’s delicious):

  • 1/4 cup buttermilk
  • 1/2 cup sour cream
  • 1 chipotle in adobo, chopped, plus 1 tablespoon adobo sauce
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped chives

After I’d used the single chipotle the recipe called for, I had many left over and didn’t know what to do with them. So I wrapped them individually in wax paper and froze them. Over the next several weeks, I’d take one out and chop it (no need to unfreeze) before adding it to a big pot of chili or tortilla soup for an awesome, smoky kick.

So what exactly are chipotles in adobo sauce? I like this description from Gourmet Sleuth:

Chipotle chiles (smoked jalapeno chiles) are canned in a red sauce that typically contains tomato puree, paprika, salt, onions, oil, vinegar, garlic, bay leaves and oregano. Used for making sauces, chipotle mayonaise, rubs as well as other recipes.

I now make a point of keeping them on hand and add them to homemade salsa and marinades. I know they can also be used in salad dressings and aioli (which is delish with sweet potato fries). And since my husband and I have fallen into the habit of eating veggie quesadillas or burritos once a week, I’ve learned to make a little sauce that gives our makeshift Mexican a muy authentico flair.

Makeshift Mexican Sauce
1 tsp olive oil
1 tsp minced garlic
1 (8 oz) can tomato sauce
1/2 tsp cumin
1 bay leaf
1 chipotle (I use one of my wax-papered frozen ones)
Water to taste

1. Heat the olive oil over medium.
2. Add garlic and sauté for 1-2 minutes.
3. Add tomato sauce, cumin, bay leaf, and chipotle.
4. Simmer for 10-15 minutes, stirring occasionally, and adding water until the sauce reaches desired consistency.

Remove bay leaf and chipotle and serve on top of quesadillas, burritos, enchiladas, or tamales.

On top of being very easy to use, one little can of chipotles goes a long way, and they give your meals distinctive flavor for just a bit of cash. (Case in point: Amazon’s showing a 7 ounce can for $3.09.) Chipotles in Adobo Sauce are also available in the Latin sections of many supermarkets.

Fall Decorating Ideas

I’m preparing to host a Bible study on Friday evening & I started thinking about fall decoration ideas. What could I do that would be simple but not too expensive? One thing I read was to take leaves and spread them down the center of the table. How quick & cheap is that!

What to do With Leftover Pumpkin

PUMPKIN FIESTA RICE INGREDIENTS

1 Package of Nueva Cocina® Mexican Rice Mix

4 small pumpkins (3 for serving purposes and 1 for recipe ingredient)

1 Tablespoon of Olive Oil Optional

2 to 3 small pumpkins, depending on serving size, for baking or steaming

DIRECTIONS FOR PREPARING THE RICE

Cut pumpkins in half, leaving the rind on. Remove seeds and strings. Rub pumpkins with olive oil and some salt. Place halves on baking sheets with rind side up. Place a small amount of water in the pan. Bake for 45 minutes in a 350-degree oven. If you prefer to steam the pumpkins, place halves in steamer with rind side up. Steam until meat and rind are soft.

Combine 1 Cup of pumpkin meat, peeled and cubed with all the ingredients in a package of the Nueva Cocina® Mexican Rice Mix and follow the cooking directions on the box. When done, serve the rice in half of a small pumpkin for an excellent presentation and great added texture and flavor.

Vegetable Lasagna

Did any of you try the zucchini chocolate chip muffins? I would love to hear your tho’ts on them! They’re one of my favorites.

Here’s another zucchini recipe that’s simple & delicious. We have lots of zucchini from our garden & we mixed up 3 of these lasagnas yesterday to stick in the freezer. I tho’t some of you are in the same place I am–you have zucchini overflowing from your fridge! So, whether you have some or whether you need to buy some, here’s a scrumptious supper recipe. Enjoy!

 

Vegetable Lasagna

Cover the bottom of a 9×13 casserole dish with sauce. Thinly slice 1 large zucchini. (If desired, you can also slice eggplant and yellow squash.) Put 1 layer of zucchini on top of sauce. Spread more sauce over that and liberally “sprinkle” mozzarella cheese over the sauce.

If you’re using eggplant or yellow squash, put a layer of that on top of the cheese. If not, just use zucchini. Follow the same layering pattern until it gets very close to the top of the pan. You should end with cheese on top.

Bake at 350 for 1 1/2 hours or until veggies are soft. Serve with fresh homemade bread. Delicious on a fall day!

SUMMER FABRIC “INGREDIENTS”

DENIM

  • BEST DENIM BLENDS: Chrissy suggests denim with a high cotton content, and small synthetic content. A jean with either a 98% cotton/2% lycra or 96 % cotton/4% Lycra fabric, is a good combination.

TEES AND TANKS

  • SOFTEST TEES: Cotton tees and tanks are favored in the summer time because it is so breathable. Look for Pima and Supima Cotton – they are the softest cottons.
  • FABRIC BLENDS AND THE “WEAR” OF YOUR FAVE SHIRTS: Combination fabric blends are often used so that garments will retain shape and remain durable over a period of time. Cotton blended with polyester, for instance, will retain its shape well and will also resist shrinkage.
  • SURPRISE FABRIC TO LOOK FOR: Look for Rayon! It drapes well and keeps its shape, even when wet.
  • SLIMMING TEES AND TANKS: If you are looking for tank that holds it shape day after day, Chrissy personally loves James Perse, Target, or BP a Nordstrom brand. They are a Cotton/Spandex blend so you can throw them on day after day, and they will hold their shape very well. The blend you should look for is 94% cotton, 6% spandex for a more tight fitting, yet slimming, tee or tank.

DRESSES

  • CAN’T GO WRONG AIRY DRESSES: 100% cotton is the way to go for light and airy dresses!
  • DRESSIER “DRESS”ING: For dressier occassions, ditch the polyester blends and look for 100% silk, which is more breatheable and cool! Another option could be a chiffon (which is made from either silk or nylon), which is also breatheable and light. Look for a lining in an acetate or nylon blend.
